TARRAGON (FRENCH)

Ideally suited to go with fish, shellfish, pork, beef, lamb, game and poultry. Leeks, potatoes, tomatoes, carrots, onions, mushrooms, cauliflower, broccoli, beets, peas, rice, barley, oranges and lemons also benefit from the addition of tarragon. It makes lovely vinegars and goes well in creamed soups and sauces as well as cheese, eggs, sour cream and yoghurt. Found in the classic Béarnaise sauce.
