Bengali five spice, Panch Puran or Panch Phoron is five different spices used whole to flavour curries and pickles. It is usually fried in a little oil or butter first until it starts popping to release the flavour then vegetables are added to coat them in the blend. Mainly used for vegetables they can also be used in fish curries and dal.
